Irish Celebration Month

photo(2)Who says you can only celebrate the deliciousness of St. Patty’s recipes for one day?  Since I had been in New York for the holiday, I missed my opportunity to make Irish Car Bomb cupcakes.  I had some friends coming over for a buffalo chicken potluck and found it to be an excuse to make these cupcakes (despite it being a weird combination and after St. Patty’s).   *Shoutout to Tori who made some awesome buff-chick dip and has a blog Winos Who Cook.

I love Brown Eyed Baker and she has the best recipe for these.   Guinness chocolate cake, Jameson-chocolate ganache, and Bailey’s icing.  Nothing is better.

irishcarbomb1I also set up a margarita bar so my friends could try out some of their own margarita recipes.

mexican lepThen things got weird with some of the other shot recipes.   The best one ended up looking hideous, so I have no picture.  The “Irish Flag” was supposed to be a cool looking layered shot of créme de menthe, Irish creme, and Grand Marnier.  Green, tan, orange- hence, the Irish Flag.  However, since I am cheap, I purchased the bargain valued créme de menthe and orange liquor, so the colors were not there.  But, it was easy to take down and left your month feeling minty clean.

Don’t feel restricted to celebrating Irish recipes on just St. Patty’s!
